Carrot and honey soup

Do you have a big bag of carrots you want to use up or do you want to find a good way of eating more carrots?! Then this is a simple recipe that you will love.

What will you need?!

A bag of carrots

Honey (2 tablespoons)

Garlic granules

Ground ginger

Ground coriander

Low-fat natural yoghurt or cream

1.5-2 litres of water

Chicken stock (optional)

Paprika or mixed spices (optional)

Method:

Peel the carrots using a potato peeler. Place the carrots (drizzled with honey) in the oven at 180C for 30 minutes. (If you don’t want to use stock you can fry some garlic and red onions to give the soup some flavour and then add to the mixture before blending.)

Then place the carrots in a pot filled with hot water (with stock). Bring to the boil and then allow it to simmer.

Place the mixture in a blender with garlic granules, ground ginger and ground coriander with a dollop of natural yoghurt.

Blend…blend…blend!

And then enjoy!

 This week was very cold and I wanted to make something that would warm us up! This soup went down a real treat in my house and I will definitely be making lots more of it!
